The interior of the Apollo reminds me of the Greek exterior landscape: simple, natural, rough, sensual, and ageless. Having safely landed in Syndey's trendy Potts Point in 2012, The Apollo offers a modern twist on Greek cuisine in an elegant setting of marble, concrete and dusty greys with a knock out menu created by chef Jonathan Barthelmess. A gift from the (Greek) Gods, no doubt.
